The former Miss World got hitched to husband Wes Quirke two years ago in a lavish ceremony in Ibiza in front of 200 guests.
The couple's big day was documented by Hello! magazine and they later had two more ceremonies in the same month to celebrate the union.
Taking to Instagram, the Wicklow native shared a photo of the loved-up couple on their big day.
"This day two years ago I married my best friend. Happy Anniversary Wes Quirke."
Businessman Wes also posted the same snap to his account in black and white and captioned it: "2 years today I married this lady."
The beauty queen has also put on her chef's hat as she geared up to take part in The National Brown Bread Baking Competition.
The event offers the lucky winner the chance to have their signature loaf in Aldi's 124 nationwide stores and receive a share in the profits worth at least 10,000.
The Wicklow native plans on making the competition a family affair and revealed she has looked to her mother Diane for help in the kitchen.
"I grew up eating my mum's homemade brown bread - so I will be asking her for tips and maybe adding some of my own favourite healthy ingredients. I have always loved to bake, and this is a great opportunity to really challenge myself," she told the Diary.
The blonde is competing in the Wicklow Federation heat in June.
Her first book, Eat Yourself Beautiful, topped the bestseller list when it was released in 2015. The 32-year-old is putting the final touches to her follow-up book.
"At the moment, I'm finishing up book edits and already planning for the book launch in September," she said.
"I'll be announcing dates for my Beauty, Food and Fitness Workshops over the autumn soon too, so right now I'm busy making plans for later in the year."
